For Cake:

  • 1/2 cup flour (I use Jovial Gluten free)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1/4 cup +1 tablespoon organic granulated sugar
  • 1/2 cup milk (almond milk works fine too)
  • 1/4 cup coconut oil, melted (or your favorite cooking oil)
  • 2 tablespoons chocolate chips
  • a sprinkle of confectioner's sugar for garnish if desired

For Chocolate Drizzle Frosting (optional)

  • 2 tablespoons cream
  • 2 tablespoons dark chocolate chips

For cake:

  1. Whisk together all dry ingredients, add melted coconut oil and milk and whisk until smooth. Stir in chocolate chips. Pour batter into two mugs and cook one at a time in microwave for 1 minute and 10 seconds. (all microwaves are different, your cooking time may vary a few seconds either way)

  2. When cake is done, carefully remove from microwave and allow to cool a bit. If desired, drizzle with chocolate cream.

For Chocolate Drizzle ( Optional frosting)

  1. Add cream to small sauce pan on medium heat. Add chocolate chips and whisk until melted and smooth. Turn off heat. Drizzle on mug cakes right before serving.
