  • 3 cups chicken broth
  • 2 eggs whisked
  • 1/2 cup finely shredded parmesan cheese
  • For garnish: chopped chives and toasted pine nuts if desired


  1. Bring chicken broth to a boil, add whisked eggs and stir
  2. Allow to simmer for 1 minute
  3. Take off heat and pour into two bowls
  4. Add half the cheese to each bowl and stir
  5. Garnish with chives and pine nuts if desired
