The Hash:

Sweet shallots, bright orange sweet potatoes, and some Italian zucchini make this a beautiful and well rounded hash.

The Eggs:

Whites solid, yolk runny. That’s the way I like it. My husband on the other hand prefers his yolks firm. To each his own! Either way, just crack those eggs right into the hash and put the lid on your pan for your perfect version.

The Recipe: Healthy Sweet Potato Hash and Eggs for Two

What you need: a good pan with a lid, a veggie peeler, and a good knife.

Ingredients
  • 1 sweet potato, peeled and diced 1/2"
  • 1 large shallot, peeled and sliced
  • 1 small zucchini, diced (peeling optional)
  • 2 tablespoons olive oil, ghee, or avocado oil
  • sea salt and pepper to taste
  • 1 tablespoon flat leaf parsley or chives, for garnish
Instructions
  1. Prep all ingredients

  2. Heat a medium size pan on high heat, when hot, add oil and lower temperature to medium

  3. Add sweet potatoes and cook for five minutes, stirring occasionally

  4. Add shallots, cooking for ten minutes, stirring frequently

  5. add zucchini, cook, stirring for five minutes

  6. sprinkle generously with sea salt and pepper, stir, create three wells by scooting veggies to the sides and gently crack one egg into each well

  7. place the lid on the pan and allow eggs to cook for 3-4 minutes depending on how done you want them

  8. sprinkle with parsley or chives, serve

    Ok, this is SUPER easy. I make a similar hash, but I don’t use zucchini or put those perfectly cooked eggs on top. **Re-thinks how I’ve been making hash.**
