One Pan. Cause We Get You
We know. We get it. If you are going to cook a healthy, hearty breakfast, the clean up needs to be quick and easy. This healthy hash checks off both boxes because it’s made in one pan!
Sweet shallots, bright orange sweet potatoes, and some Italian zucchini make this a beautiful and well rounded hash.
Whites solid, yolk runny. That’s the way I like it. My husband on the other hand prefers his yolks firm. To each his own! Either way, just crack those eggs right into the hash and put the lid on your pan for your perfect version.
The Recipe: Healthy Sweet Potato Hash and Eggs for Two

- 2 tablespoons olive oil, ghee, or avocado oil
- sea salt and pepper to taste

Add shallots, cooking for ten minutes, stirring frequently
add zucchini, cook, stirring for five minutes
