The Hash:
Sweet shallots, bright orange sweet potatoes, and some Italian zucchini make this a beautiful and well rounded hash.
The Eggs:
Whites solid, yolk runny. That’s the way I like it. My husband on the other hand prefers his yolks firm. To each his own! Either way, just crack those eggs right into the hash and put the lid on your pan for your perfect version.

Ok, this is SUPER easy. I make a similar hash, but I don’t use zucchini or put those perfectly cooked eggs on top. **Re-thinks how I’ve been making hash.**
Lol. I am sure your hash is just lovely!
I love the visual brightness of these veggies together, plus one is rich and the other is refreshing + the eggs, so yummy. Yay for one pan too!
I wonder if I could get my un-sweet-potato-loving hubby to eat this with me? Well… if not, I’m sure I could handle the whole thing myself. 😉
If he likes white potatoes you could make it with those:)
This looks like the most amazing breakfast! I could have this everyday.
Love all the refreshing flavor and gorgeous color in the recipe. I’m drooling just by looking at the photos!
As per normal.. A gorgeous presentation with delicious ingredients!!
